Ingredients
- Fresh Spinach: 4 cups
- Bacon: 6 slices
- Heavy Cream: 1 cup
- Garlic: 2 cloves, minced
- Shredded Mozzarella Cheese: 1 cup
- Salt: to taste
- Pepper: to taste
Instructions
- Wash and chop the fresh spinach, and mince the garlic.
- Cook the chopped bacon in a skillet over medium heat until crispy, then transfer to a paper towel-lined plate.
- Sauté the minced garlic in the bacon drippings for 30 seconds, then add the chopped spinach and cook until wilted.
- In a mixing bowl, combine the sautéed spinach and bacon, then add heavy cream and half of the mozzarella cheese.
- Preheat the oven to 375°F (190°C), transfer the mixture to a greased baking dish, top with remaining mozzarella, and bake for 25-30 minutes until bubbly and golden brown.
Notes
- Store leftovers in an airtight container in the refrigerator for 3-4 days.
- Can be frozen for up to 2 months; thaw in the refrigerator before reheating.
- Pairs well with roasted vegetables, garlic bread, or a simple salad.
